Avocado Chocolate Mousse is a healthy no bake dessert recipe made with a few ingredients in a few minutes. It’s vegan, low-carb, refined-sugar-, dairy- and gluten free and tastes sweet and rich! Avocado contains healthy fats and plenty of potassium – more than a banana. Dark chocolate contains good source of magnesium and can also release serotonin, which increases feelings of wellbeing.

INGREDIENTS:
2 very ripe avocados
½ cup 70% dark chocolate (melted, dairy or non-dairy)
¼ cup raw cocoa powder
¼ cup almond milk
2 tablespoon honey or maple syrup
2 teaspoons vanilla extract
Pinch sea salt
Coconut whipped cream for topping (optional)
Strawberries for topping (optional)
METHOD:
In a food processor or high-speed blender, combine avocados, melted chocolate, cocoa powder, almond milk, honey/maple syrup, vanilla extract and salt. Blend until smooth and creamy, about 2 minutes, stopping as needed to scrape down the sides.
Divide the mousse equally into four bowls or jars, and chill for at least one hour to get a more mousse-like consistency.
Serve mousse cold with coconut whipped cream and strawberries, if desired.
TIP: Because honey is so sticky, it can be difficult to measure it accurately – so much can be left behind on the spoon! If, however, you coat the measuring spoon with a thin layer of flavourless oil like groundnut, it will slip right off, ensuring that the right amount of honey makes it into your cooking.
